Beans
Beans are the mainstay of Mexican food and no Guide to Mexican Dundee Food is complete without mentioning them! Black beans are the most common ingredient in Mexico, and they are used to make Frijoles (or pinto beans), which are used for refried bean recipes. Mexican stews often include beans.
Corn
Mexicans are often described as people who eat corn. Corn was domesticated more than 10,000 years ago. It is a staple of the Mexican diet and a cultural icon thanks to its rich history.
Mexican cuisine is full of delicious corn dishes, such as tortillas, tamales, or our favorite way to eat it – with chipotle mayo, like you’ll find at street vendors in Mexico City.
Tortilla Wraps
Tortilla wraps are the best way to enjoy Mexican food. They are the carriers and holder all the wonderful things we discuss below.
They are made from wheat or corn, and can be either large or small.
It all depends on where you live in Mexico. Central and Southern Mexico have corn, while Northern Mexico has wheat. It all depends on what the local crop is.
Wheat tortillas are more popular outside of Mexico because they are easier to prepare (and don’t crack) and are generally softer. Burritos are made with wheat tortillas.
The biggest debate in Mexican cuisine is whether corn or wheat should be used. It really doesn’t matter. Both are equally delicious, so it really comes down to your personal preference.
Chillies
One of the most important aspects of Mexican cuisine is Chillies. Chillies can also add flavour and heat to food. Mexican food has many types of chillis, from the smokeiness of chipotle and the sweetness of Guajillo.

Tacos
Tacos are the most common way to think of authentic Mexican food. Tortillas, the staple Mexican bread, are what you’d call a taco. It is basically everything wrapped up in tortillas. Tacos can be eaten as a snack, breakfast, lunch, and dinner. Tacos are a Mexican classic that has stood the test of times and have been around for hundreds of years.
What makes a taco?
There are two major differences among the many varieties of tacos. The first concern the tortilla, which is made from corn and flour. The southernmost part of Mexico is home to corn tortillas. Flour tortillas are the most popular in Mexico’s northern region.
The filling is the second major difference between different types of tacos. Tacos usually have one filling, but there are many fillings available.
There has been an explosion of vegan tacos due to the growing number of plant-based eaters. This is much to the dismay and disgust of traditional meat-eating Mexicans.
You can then top the filling with any number of toppings, including cilantro and finely chopped onion, quick slaw, pickle, Green Serranos and Sliced Cactus, and/or salsa.
There are many types of tacos

Carnitas are the most common street stall version. They are made with various cuts of pork, and are cooked with lard and other spices.
Al Pastor: The king of tacos. Made with either pork meat or veal, and normally cooked over charcoal.
Barbacoa is a barbeque taco made with different meats, either steamed or with lemon juice. You can use different types of meat, such as chicken, goat, rabbit, or fish.
Burritos
Next we will discuss burritos in our guide to authentic Mexican food. What size tortilla you use and how many you consume are the main differences between tacos or burritos. Tacos can be small and open so you may need to eat 3-4. Burritos, on the contrary, have a larger tortilla and can be filled with a variety of different fillings. A single burrito could be enough to make a complete meal.
Because corn tortillas are too large to break, flour tortillas are used for burritos. The soft flour tortilla ends are folded in, then the wrap is closed. For a substantial all-in-one meal, you can find meat and rice inside.
Fajitas
Fajitas is a term that refers to the filling. Although they were originally made with steak strips, you can now find fajitas that contain any protein. They do contain onions and peppers.
Quesadillas
Quesadillas are next in our guide to Mexican food. Quesadillas are all about the cheese. To make a quesadilla you will fill a tortilla and then toast it in a pan until the cheese melts. Other fillings are possible, such as chicken or carne asada steak.
Queso Oaxaca, a stringy Mexican cheese, is commonly used. Queso Oaxaca is not easy to find so we recommend using a good melt cheese like cheddar, gouda or gruyere.
Nachos
Nachos is next on the Beginner’s Guide to Mexican Food’s list. Nachos are made with lightly salted tortilla chips, which are tortillas that were cut into triangles and quickly fried. Serve with melted cheese and a variety toppings. This is a great dish to serve as a starter or snack when entertaining.
Chilaquiles is a Mexican breakfast staple. These are a type of breakfast nachos. They are usually made with Salsa Verde, and topped with a Fried Egg.
Tostadas
Tostadas are made with a crispy, fried flat tortilla base. Tostadas are usually topped with cheese, shredded lettuce, and refried beans. A Tuna Tostada is another popular variation that’s quite different. It features delicious tuna ceviche, fried onions and our Chipotle Mayo.
